Marbled Peanut Butter & Dark Chocolate Banana Bread

This bake is the perfect companion to have with a cup of tea or coffee now the weather is getting colder. It's great for all the family because using dark chocolate and natural peanut butter reduces the overall sugar. I don't know what the nutritional information is for this, but think of it as a treat. 




Ingredients

  • 100g of Green & Blacks Organic Dark Chocolate (85% Cocoa)
  • 170g Caster Sugar (or Brown Sugar)
  • 680g of Plain Flour
  • One Teaspoon of Baking Powder
  • One Teaspoon of Cinnamon
  • 34g Sour Cream
  • Two Eggs (I used Clarence Court Burford Browns, because I think they're the best.) 
  • 100g of Butter (I used Lurpack) 
  • One tablespoon of Organic Pip & Nut Peanut Butter 
  • Three very Ripe Bananas 
  • Pinch of Salt 
  • Handful of Walnuts for topping (Optional) 

Method

Preheat your oven to 170 degrees c
1. Melt 3/4 of the chocolate in the microwave, stirring as you go, & set aside to cool. Do not allow to boil. 
2. Melt your butter in a saucepan and allow to cool. 
3. Weigh and mix all the dry ingredients (flour, sugar, baking powder, cinnamon, salt.)
4. Beat the eggs, butter and sour cream together. In a separate bowl mash your bananas and then add to the egg and mix in until it's all combined. 
5. Start adding your wet ingredients to your dry and fold in with a spatula until both are combined. 
6. Put a third of your mixture in another bowl and mix in your melted chocolate. 
7. Grease a non stick loaf tin with butter and add your plain mixture. Next, with a spoon, add blobs of your chocolate mixture into the tin. Add your peanut butter in the same way, into blobs into the mixture. 
8. Using a knife, slowly swirl the mixture together, but not too much otherwise it will all mix together and you won't get the marble effect. 
9. Put your tin in the oven and bake for around 35 minutes. Test with a knife and when it comes away clear, it's ready. 
10. Leave in the tin for 5 minutes after removing from the oven and then transfer to a wire rack to cool completely. 
11. If you want to, you can decorate your banana bread with melted chocolate and chopped walnuts.
